Having bought too much cheese last Christmas, I asked the question on various forums whether it was possible to freeze cheese.

It would appear that it is possible to freeze cheese, depending what type it is and how successfully it will work.

Soft ripened cheeses such as Camembert and Brie are not advisable to freeze.  Semi soft cheeses like Gorgonzola and Monterey Jack can be frozen, but do tend to be crumbly once thawed, so best used in cooking.

The more aged hard cheese fares well in the refrigerator and can only improve with age.  However if you want to refrain from the cheese growing mould then it can be frozen.

It is advisable to freeze the cheese in small pieces or even grate it, as larger pieces again tend to crumble once thawed.

 Wrap the pieces in plastic wrap to begin with, then either foil or an air tight bag before labelling and putting in the freezer.

Cheese can be stored this way for about three months before it affects the taste and texture.

 To defrost your cheese, place in the refrigerator for about 7 – 8 hours for 500g (1LB)
