OH and I made this Christmas cake yesterday, no grains at all and the author of the recipe said it could also be dairy free by removing the eggs, although she didn't say what to replace them with. Otherwise it has no other dairy as you replace the butter with coconut oil.
Looks gorgeous B! My DIL is vegan (the doctor suggested she try it) but she can eat eggs and I guess it's because eggs have no lactose so for health reasons eggs are fine I think. The only reason for not eating eggs would be that they are an animal product so true vegans would not eat them I suppose. Aproper pain if you are baking!
Luckily Beckyboo, there are so many recipes on the internet for vegan free cakes for the vegans out there. We are trying to make something for YD for Christmas lunch in place of the meat as she has been vegan since the spring.
