I have been surprised to learn that quite a few of my friends make their own sausage rolls. I have never thought to make them, but obviously with being home more I thought I would give it a go.
One suggested mixing onion marmalade in with the meat. I will use bought puff pastry can only make shortcrust.
Any tips of suggestions for variety ?

There is nothing our little granddaughter enjoys more than making sausage rolls. Shop bought puff pastry, any make and her favourite sausages (skin removed). If you get sausage meat you could add sun dried tomatoes, fresh herbs, ready made stuffing any flavoring of your choice. Even black pudding.

They sound delicious, from both of you  I try not to eat 4 legged animals but sausage rolls are soooo good.

B, you can get some really tasty vegan sausages. If you make your own puff pastry, you could be enjoying your sausage rolls. There are some good recipes on line for vegetarian/vegan pastry.

OH made sausage rolls at Christmas as he had bought too much sausage meat and I found some puff pastry in the freezer. He found a lovely Jamie Oliver video where he showed how to make a Christmas Wreath from puff pastry and sausage meat. The sausage rolls were delicious, so much nicer than shop bought.
