Best cake I have had of late was a huge snowball. It's a scottish style bun covered in coconut flakes with a thin icing and jam in the middle. My daughter knows I like them, and you can't buy them down south.
It was so simple to do - but the actual sponge needs a little fine tuning. The top half cooked ok but the bottom half needed a bit longer. I ended up scooping a little soggy patch put of the middle and filling ti with choc chips before I assembled it. Chocolate overkill lol
