Hi SD, I made some yesterday - 8oz Plain flour, 4oz Butter (cold and cut up), 1 egg (whisked). I do it in the food processor with a blade attachment. Put the flour and butter in and wizz until well mixed then add some beaten egg (you might not need all of it) until it starts to clump together. Then take it out and knead it until it holds together and you can roll it out. Bake mince pies at about 190c for 15 minutes. I egg wash with the left over bit of egg if there is any and add a splash of milk to brush the tops. After I brush them I either bake them or freeze them and then bake from frozen when I need them.
This is my favourite pastry recipe - it takes seconds to make.
I wish they would SD, I used to keep the lovely big tins they came in not so many years ago, so handy for transporting cakes but the plastic ones are good for nothing!
Oh I love that song Linda! Another one that gets stuck is The Sound of Silence but the one that's stuck at the moment is This Little Light of Mine.....
I have an iphone and use the app which came on the phone for my music (it just says music on it) the only other one I use a lot is WhatsApp because I can send photos for free
I love looking at all the houses lit up as we drive or walk by in the evenings. We don't have lights outside but indoors our house looks like a tacky 70's disco!
Beautiful books SD - we went to a book evening in Cambridge at Heffers on Thursday night and the Brexit Island (and the rest in the series) were on display, they looked really good. I find it's easier to pick a theme (like books) when Christmas shopping for our large family
I am very lucky as Hubby cooks the Christmas Dinner every year - I don't know that he'd want to have it the night before as that means he'd have to give up the enormous Chinese Takeaway he orders on Christmas Eve! One tiny thing for me is that when I used to cook the dinner, I had something to do with myself other than eat more mince pies while I'm waiting... This year I must do a Christmas puzzle with our sons instead!
